Ricciarelle Romeo are our Company's new exclusive format, created with “haute cuisine” to obtain a long format of pasta, dried on cane that, thanks to its reduced thickness, could be quick to cook but in the same time, it could be able to keep every kind of sauce and/or seasoning very well.

Ricciarelle Romeo represent the perfect meeting of quality, artisan production (Ricciarelle are drawn, trimmed and then packaged exclusively manually), taste and creativity /thanks to their length of 52 cm and to their particular format, they're perfect for creating choreographic and creative dishes).

Ricciarelle Romeo are bronze drawn and slowly dried at low temperatures for ensuring the right roughness and consistency to the product for mixing perfectly with every kind of sauce and/or seasoning. Durum wheat semolina we use for producing our Ricciarelle comes from durum wheat cultivated in Tuscany.

The cooking time can vary from 5 to 7 minutes; for the genuine artisan pasta, for the fact that there are not standardised processes of production and that the mix of semolina varies according to the durum wheat semolina farmers that give use the raw material, it's advisable to have a direct cooking test by tasting pasta at the beginning of the minutes indicated as the cooking time (from 5 minutes for Ricciarelle).
